Maguey Barril, or Agave karwinskii, is one of the more than ten ethnotaxonomic varieties used in the production of mezcal. Also known as San Martín, this agave is distinguished by its mature, elongated stems, commonly known as piñas. These piñas, when meticulously cared for during their growth, can reach a weight of more than 200 kg. The importance of these pineapples lies in their high content of polysaccharides, key components that, once processed, become the distinctive mezcal.

The relevance of the Maguey Barril in mezcal production is not only due to its size or chemical composition, but also to its role in the biodiversity and ethnobotany of the region.
