Maguey Espadín (Agave angustifolia Haw) is an emblematic species within the diversity of agaves used in mezcal production. Morphologically, this plant is characterized by having cespitose rosettes that open widely, reaching heights of 1.0 to 1.5 meters and diameters of 1.5 to 2.0 meters. The stems of this species, which vary between 20 and 60 cm in length, support mature leaves whose shapes fluctuate between linear and lanceolate, measuring 60 to 120 cm long by 3.5 to 10 cm wide. These leaves, also known as pencas, adopt positions that go from ascending to horizontal and present tonalities that oscillate between light green and grayish green, reflecting the adaptability of the species to different ecological environments.

The morphological configuration of Maguey Espadín is not only distinctive, but also functional, playing a crucial role in the survival and reproduction of the plant.
